Hai Mba, mau urun saran nih, aku kalo masak cumi ga perlu dikasih air lagi, jadi abis cumi dicuci langsung dimasak bersama bumbu2/bumbu ditumis dulu baru masuk cumi, jangan ditambah air, karena nanti cumi sendiri akan ngeluarin air, dijamin cumi pasti empuk

setuju banget sama Molly.
Protein hewani seperti daging ayam, sapi, ikan, udang, cumi, dll
semakin lama dimasak/terkena panas akan semakin liat. Oleh sebab itu
sebaiknya memasak protein hewan asal matang aja.
Ilmu itu aku dapat pas baca buku "kalau einstein jadi koki" jadinya
sekarang setiap kali menggoreng ayam, udang, menumis daging sapi,
bikin steak, pokoknya kalau masak daging-dagingan aku bikin asal
matang aja. dan hasinya empuk. contohnya seperti aku buat karagee yg
ada di blog-ku mbak.
dulu pas bikin udang goreng tepung juga rasanya udang selalu liat,
tapi setelah tahu trik-nya itu aku cuma menggoreng asal tepung
coatingnya matang dan langsung di angkat, hasilnya udangnya masih
juicy dan empuk.
cumi begitu juga. kebetulan kemarin pas ke anyer aku juga makan cumi
goreng. (makasih kepada mbak Ria member milis ini yg membantuku
mencari ikan segar di anyer) padahal bumbunya menurutku minimalis
banget tapi cuminya sendiri empuk banget. langsung deh berfikiran
kalau cumi seperti itu mengolah/ memasaknya hanya dalam waktu sekejap
asal sudah matang aja. gak perlu diungkep (soalnya kalau diungkep
malah memakan waktu lama dan belum tentu bisa empuk dan renyah seperti
itu).

[H W] Resep masakan : Chicken with Broccoli

Chicken with Broccoli
Serves 4
Ingredients:
2 whole chicken breasts
1 large head or 2 small heads broccoli
1 tsp salt
2 tsp sherry
2 tsp corn flour
1 cup good chicken stock
1 tbsp olive oil
grated fresh ginger
to taste. I use about 2 tbsp
(keep fresh ginger
in the freezer, and when required
grate it straight from freezer)
1/2 cup cashew nuts or blanched almonds
Crisp Fried Rice noodles or Orgran Rice Pasta
Directions:
Cook noodles or pasta.
Skin the chicken, cut into pieces.
Wash broccoli and break into small stalks.
Combine salt, browning, and sherry in a bowl, mix
well.
Heat oil in wok, add ginger, stir fry 1 minute.
Add chicken, stir fry 1 minute.
Add sauce mixture and broccoli, bring to boil,
stirring, reduce heat, cover and simmer 3-4
minutes, adding more stock if necessary..
Add nuts, serve on noodles or pasta.
Per Serving (excluding unknown items):
277 Calories; 14g Fat (44.1% calories from fat); 28g
Protein; 10g Carbohydrate; 2g Dietary Fiber; 72mg
Cholesterol; 587mg Sodium. Exchanges: 0 Grain
(Starch); 3 1/2 Lean Meat; 1 1/2 Vegetable; 2 Fat.

Yang aku tahu, klo masak cumi itu, klo sebentar, ya bener2 sebentar (api besar), klo mau lama, ya lama sekalian, jadi empuk....
Yang masaknya nanggung - lama engga, sebentar juga engga - itu yang bikin alot.... klo aku lebih prefer lama, krn bumbunya jadi lebih meresap...

Helga ada dimana ?
Siang ini pas aku lagi jalan-jalan di Griya jl. Pahlawan bandung aku menemukan ada coklat couverture dari L'agie. produknya namanya Toba.
Aku juga mau bikin brownies MBA-nya mbak Yenny agogo nih.
Jadi kalau Helga ada atau dekat dengan toserba Yogya (setahuku toserba Yogya ini 1 kelompok dengan Griya) coba aja dilihat di rak bagian bahan kue mungkin ada juga coklat couverturenya.
